Reading Break

So for this reading break I really wanted to focus on getting back on track with sleep, exercise, and nutrition. I found the best, easiest recipe in the world for banana pancakes and it has changed the breakfast game monumentally. When we had the snow day during the week before reading break our house had a bunch of friends over and one friend has a lot of eating restrictions so when we decided to make pancakes she suggested that we make banana ones. All you do if you are creating a meal for one person is smash one banana in a bowl, add in a cup of oats, 1 egg, a half cup of almond milk, hemp hearts, cinnamon and if you’re feeling frisky some chocolate chips, then just cook them with a bit of coconut oil and BAM the most delicious pancakes ever.

This was so exciting for me because they actually taste way better than regular pancakes, they’re much sweeter and you don’t feel like you indulged in a whole package of flour. I have now been eating them almost daily since the discovery. I can’t way to go home and make them for my family, I have decided to not tell them how healthy they are until after and wait for the oooh’s and ahhhh’s.
